Chorizo Shakshuka

Cooking time: 30 mins

SERVES: Serves 2

Ingredients

-1 Onion Sliced.
-2 Clove of Garlic Sliced.
-1/2 scotch bonnet chilli.
-150g Mild Chorizo Sliced.
-3g ground cumin.
-3g ground coriander.
-3g smoked sweet paprika.
-200g Cherry tomatoes.
-1 Tin of chopped Tomatoes.
-4 Large Eggs.
-50g chopped Coriander or parsley.
- Sea salt & Cracked black pepper.

Method

- Firstly select a deep Sauté or frying pan and place on on a medium heat. Then glug a good amount of olive oil into the pan and add your onion, garlic, scotch Bonnet, chorizo & ground spices.
- Sweat this with a good pinch of salt and pepper for roughly 5 minutes. Then add your cherry tomatoes place a lid on the pan and continue to sweat for a further five minutes.
-When the tomatoes are soft and easily squashed pour your tin of tomatoes and continue to cook the sauce down for 20 minutes, until it is rich in colour and deep in flavour.
-Create four small wells for your eggs to sit in with the back of a spoon, crack your eggs into the wells cover with a lid then place in a 160° oven for six minutes. Whilst the eggs are cooking Chop your parsley or coriander then when the timer is up sprinkle your herbs over the top and serve.
