Mango & Coconut Granola

SERVES: Serves 4

Ingredients

-50ml vegetable oil.
-125ml maple syrup.
-75g honey.
-1 vanilla pod scrapped.
-300g rolled oats.
-200g mixed whole raw nuts. (Hazelnuts, Brazil nuts, Almonds, pecans)
-200g dried mango chopped.
-50g coconut flakes or desiccated coconut.

Method

-Heat oven to 150C. Mix the oil, maple syrup, honey and vanilla in a large bowl. Tip in all the remaining ingredients, except the dried Mango and coconut, and mix well.
-Tip the granola onto two baking sheets and spread evenly. Bake for 15 mins, then mix in the coconut and dried mango, and bake for 10-15 mins more. Remove & cool.
-Scrap of the tray and store in a air-tight jar or serve with yogurt and more maple straight away.
-The granola can be stored in an airtight container for up to a month.
