Caramelised Banana French Toast with Rum Raisins

Cooking time: 30 mins

SERVES: Serves 6

Ingredients

-100g Golden Raisins.
-250g Spiced Rum.
-100g Whipping Cream.
-1/2 scraped Vanilla Pod.
-10g caster sugar.
-1 Loaf of Raisin & Walnut Brioch.
-6 eggs.
-200g milk.
-50g caster sugar.
-2g ground cinnamon.
-2 bananas.
-20g caster sugar.
-Unsalted Butter.

Method

- boil the rum for 30 seconds, pour over the raisins in a heatproof bowl, cover and fridge overnight (or at least 30mins)
-whip together the cream, Vanilla & 10g of caster sugar until soft peaks the store in the fridge.
- Crack your eggs into a metal bowl then whisk together with the milk, 50g caster sugar. A good splash of your raisin rum & cinnamon.
-Slice your bread into wedges and place on a plate that is half filled with your egg mixture.
- leave to soak for ten minute, Flip and leave for a further 10 minutes. Too up the egg mix if the plate looks a little dry.
-take a large non-stick frying pan and warm on a medium heat with a generous knob of butter when the buyer is foaming and your soak slices and fry until golden brown.
-filp once golden and place in a pre-heated 160c oven for 5-6 minutes.
- in a medium sized frying pan add your castor sugar and bring to a deep brown colour. Then peel and half your bananas placing the cut side down into the caramel. Add a splash of your raisin rum and Flom bay until the flames subside, transfer onto a tray and get a big white plate ready for dishing up.
-place the slices onto the plate and dust with icing sugar and then scatter your rum soaked raisins, dollop your cream, and add your stunning caramelised bananas. Enjoy!
