Coronation Chicken Sandwich

SERVES: Serves 4

Ingredients

- 4 Chicken Thighs (bone in)
- 5g Curry Powder (+ 1 tsp for later)
- 2g Ground Cumin
- 2g Garam Masala
- 5g Garlic Powder
- Salt & Pepper (to taste)
- 100g Yoghurt
- 1 clove of Garlic (grated)
- 1 thumb of Ginger (grated)
- Mango Chutney
- Mint & Coriander dressing
- 100g Golden Raisins
- 1 x Passionflower Teabag (you can use Jasmin, Camomile or any other you like) steeped in 300ml Water (boiled & hot).
- 100g Mayonnaise
- Bread of your choice (toasted)
- Toasted Flaked Almonds
- Crispy Onions

Method

- Mix the chicken together, with the curry powder, cumin, garam masala, garlic powder, yoghurt, garlic, and ginger with a pinch of salt & pepper.
- Place on a roasting tray and bake in a pre-heated oven at 180°c for 20 mins. Drain all the cooking juices into a pan, then leave the thighs to rest for 15 mins.
- Reduce the juices until thick & saucy, then set aside.

- Steep your raisins in the hot tea and leave to soak overnight.
- Mix the cooked chicken, roasting juices, soaked raisins (drained), and mayonnaise together with a tsp of curry powder and another pinch of salt & pepper.

- Spread your Coronation mix across a slice on toast and cover in mango chutney.
- Sprinkle on your toasted almonds & crispy onions, then drizzle with mint & coriander dressing.
- Close & ENJOY!
