Caprese Salad

SERVES: 2

Ingredients

•2 tomatoes.
•1 ball of mozzarella.
•10g basil.
•2 sprigs of thyme.
•1 sprigs of oregano.
•Salt (to taste)
•Cracked black pepper (to taste)
•Caster Sugar (to taste) - if your tomatoes aren’t quite ripe.

Method

- Slice your garlic and bruise your herbs before placing on a tray and guzzling with extra-virgin olive oil. Creating a bed of flavour in which to macerate your tomatoes.
- Thickly slice your tomatoes. Season with salt, cracked black pepper and a little sugar if needed.
- Leave to macerate, turning occasionally in the aromatic oil.
- Thickly slice your mozzarella and place on a plate in between your slices of macerated tomatoes.
- Sprinkle with more herbs, a guzzle of extra Virgin olive oil, salt & pepper.. and ENJOY!
