Ingredients

-50g caster sugar
-5 egg yolks
-1 vanilla pod.
-100g full fat milk
-300g double cream
-100g sugar for brûlée.

Method

- Slowly warm the milk, cream and vanilla in a pan.
- Take your egg yolks & caster sugar and whisk together in a metal bowl.
- Slowly pour the hot milk & cream in whilst whisking constantly.
- Once combined, pour into 4 ramekins, place in a bain-marie, half fill with boiling water. Cover tightly with tin foil and place in a 150°c oven for 20 mins.
-Place the whole bain-marie on the side for 20 mins to rest then place the cooked brûlées in the fridge to set for a minimum of 6 hours.
-When cold, cover with sugar and brûlée with a blow torch or under a hot grill.
-Allow the sugar to cool and then serve and enjoy.
