Blue Cheese, Chicory & Walnut Salad

Ingredients

- 40g Blue Cheese
- 3 Endives/Chicory (your choice of yellow, red or both)
- 20g Balsamic vinegar
- 20g apple cider vinegar
- 100g olive oil
- 200g Halved walnuts
- 50g Honey
- 1 Green apple
- Salt (to taste)
- Cracked black pepper (to taste)
- 1 small bunch of Fresh dill

Method

- Roast your walnuts at 185*c in the oven. Once toasted, toss in a bowl with honey, salt & pepper then leave to cool.
- In a large bowl, whisk together the salt, pepper, both vinegars then Add the oil and whisk until emulsified.
- Cut your chicory into chunks, ensuring you remove the root. Then thinly slice your apples.
- Place your chicory chunks and apple slices onto a plate, crumble over your blue cheese, top with your honey glazed walnuts, balsamic dressing, and fresh dill.
