Stracciatella, Tomato & Peach Salad with Caramel & Prosecco Dressing

Ingredients

- 200g Stracciatella (Or Burrata)
- 4 large Tomatoes (variety of your choice)
- 2 peaches (variety of your choice)
- 1/2 Shallot (finely diced)
- 1 garlic clove (crushed)
- 75g caster sugar
- 2 tbsp water
- 20g White Wine Vinegar
- 100ml Prosecco
- Coriander Seeds (toasted & crushed/blitzed)
- 100g Extra Virgin Olive Oil
- Salt (to taste)
- Cracked Black Pepper (to taste)
- 1 small bunch of Basil

Method

- In a heavy bottomed saucepan, place your sugar and water onto the heat and bring to a dark caramel. Add your Prosecco and reduce to a syrup consistency, then add your white wine vinegar, shallot and garlic. Set aside for later.
- Season your stracciatella with salt, cracked black pepper, coriander seeds (toasted & crushed) and a slug of extra virgin olive oil. Mix gently.
- Thickly slice your tomatoes & peaches. Set the peach slices aside and season your tomato with salt, cracked black pepper, and your caramel Prosecco dressing. Leave to macerate for 10 mins.
- Place your stracciatella on the plate, top with slices of fresh peach, and macerated tomatoes, tear on some basil leaves, and add a final drizzle of dressing, followed by extra virgin olive oil... and enjoy!
