Roast Turkey with Lemon & Thyme Butter

Cooking time: 2 hrs

SERVES: 4-8

Ingredients

- 1 4kg Bronze Turkey.
- 50ml Sunflower Oil
- Salt (to taste)
- 150g Butter (room temperature)
- 10 Sprigs of Thyme
- 2 Lemons (zested)
-good pinch of cracked black pepper.

Method

- Ensure the wishbone is removed before rubbing your turkey in sunflower oil until fully coated.
- Sprinkle with salt, and place on a roasting tray in a pre-heated oven at 220°c for 25mins.
- In a mixing bowl, mix together the butter, cracked black pepper, lemon zest and thyme.
- Spread over and inside the turkey before returning to the oven. Continue to roast at 120°c for a further 55-65 mins. You’re looking for 63°c on the thermometer at the fattest part of the breast.
- Remove the turkey from the oven, place on a cooling rack and keep all the roasting juices for the gravy! Leave to rest for 15 mins … then carve, and ENJOY!
