Roast Goose

Cooking time: 2 hrs

SERVES: 8-10

Ingredients

-1 Goose
-Salt (to taste)
-5g Ground Clove
-5g Ground Cinnamon
-5g 5 Spice
-5g Ground Ginger
-100ml Honey
-Rosemary & thyme (as garnish)

Method

-Remove the wing, and wishbone from the goose using a boning knife. Then score the skin creating “tiger stripes” across each breast.
-Rub a generous amount of salt around the whole bird, before placing on a lined roasting tray and placing in a pre-heated oven at 195°c for 35-45 mins.
-In a bowl, mix together the honey and all the spices to a thick paste and set aside.
-Remove the goose from the oven and brush with a generous helping of spiced glaze before leaving to rest for 20mins.
-glaze once more, then carve, and enjoy!
