Soy, Lime, Ginger & Honey Glazed Mackerel

Ingredients
- 4 fresh mackerel fillets
- 4 tablespoons soy sauce
- Juice of 2 limes
- Zest of 1 lime
- 10g pickled ginger
-20g honey
-10g sesame seed
-1 chilli (sliced)
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Fresh cilantro leaves for garnish
Method
-In a bowl, whisk together the soy sauce, lime juice, lime zest, chilli , honey, minced garlic, vegetable oil, salt, and pepper to make the marinade.
-Place the mackerel fillets in a shallow dish and pour the marinade over them, making sure to coat each fillet evenly. Let them marinate for about 20-30 minutes.
-Preheat your barbecue or grill to medium-high heat. Make sure the grates are clean and lightly oiled to prevent sticking.
-Remove the mackerel fillets from the marinade, allowing any excess marinade to drip off.
-Place the fillets on the preheated grill, skin side down, and cook for about 3-4 minutes on each side, or until the fish is cooked through and flakes easily with a fork.
-While grilling, baste the fillets with the remaining marinade to enhance the flavors.
-Once cooked, remove the mackerel fillets from the grill and transfer them to a serving platter.
-Garnish with fresh coriander leaves, pickled ginger, sesame seeds and serve. - A Fennel salad would work great along side this!
