Jerk Pork Chops with Spiced BBQ Sauce

Cooking time: 45 mins (+ overnight marinade)

Ingredients

- 4 bone-in pork chops

- 30g soy sauce

- 30g  sunflower oil

- 30g lime juice

- 20g jerk seasoning wet 

-2g jerk seasoning dry

- 2 cloves garlic, minced

- 5g dried thyme

- 2g ground allspice

- 2g ground cinnamon

-2g garlic powder

- Salt and black pepper to taste

Spiced BBQ Sauce:

- 250g ketchup

- 60g brown sugar

- 30g soy sauce

- 30g lime juice

- 30g apple cider vinegar

- 15g jerk seasoning wet

- 15g Worcestershire sauce

- 2g garlic powder

- 2g ground black pepper

- 2g cayenne pepper

Method

-In a bowl, combine soy sauce, sunflower oil, lime juice, jerk seasoning, minced garlic, dried thyme, allspice, cinnamon, salt, and black pepper. Mix well to create the marinade.

-Place the pork chops in a shallow dish or a zip-top bag. Pour the marinade over the chops, making sure they are well coated. Cover the dish or seal the bag and refrigerate for at least 2 hours or overnight for the flavors to develop.

-Preheat your grill to medium-high heat.

-Remove the marinated chops from the refrigerator and let them come to room temperature for about 20 minutes.

-Grill the chops for approximately 4-5 minutes per side or until they reach an internal temperature of 63°C for medium doneness.

-Remove the chops from the grill and let them rest for a few minutes before serving.

-In a saucepan, combine all the spiced BBQ sauce ingredients and whisk together until well combined.

-Place the saucepan over medium heat and bring the mixture to a simmer.

-Reduce the heat to low and let the sauce simmer for about 5 minutes, stirring occasionally.

-Remove the sauce from the heat and let it cool. As it cools, the flavors will meld together.

-Once the sauce has cooled, transfer it to a jar or airtight container and refrigerate until ready to use.

-Serve the Jerk BBQ Sauce alongside the grilled BBQ Jerk-style Pork Chops.
