Prawn Skewers with Mango Lime Salsa

Ingredients

- 500g frozen cleaned King prawns

- 2 tablespoons olive oil

- 2 cloves garlic, minced

- 1 teaspoon paprika

- 1/2 teaspoon ground cumin

- 1/2 teaspoon ground coriander

- Salt and pepper to taste

For the mango lime coriander salsa:

- 1 ripe mango, peeled and diced

- 1 small red onion, finely chopped

- 1 small red chili, seeds removed and finely chopped

- Juice of 1 lime

- 2 tablespoons fresh coriander (cilantro), chopped

- Salt to taste

Method

-Thaw the frozen cleaned King prawns according to the package instructions. Pat them dry with a paper towel and set aside.

-In a bowl, combine the olive oil, minced garlic, paprika, ground cumin, ground coriander, salt, and pepper. Mix well to create a marinade.

-Add the King prawns to the marinade and toss to coat them evenly. Let them marinate for about 15-20 minutes.

-Meanwhile, prepare the mango lime coriander salsa. In a separate bowl, combine the diced mango, chopped red onion, chopped red chili, lime juice, fresh coriander, and salt. Mix well and set aside.

-Preheat the barbecue grill to medium-high heat & Thread the marinated King prawns onto your skewers, piercing them through the tail and head end.

-Place the prawn skewers on the preheated grill and cook for about 2-3 minutes per side, or until the prawns turn pink and opaque.

-Once cooked, remove the prawn skewers from the grill and let them rest for a minute.

-Serve the prawn skewers hot with the mango lime coriander salsa on the side.
