Crispy Fried Chicken Burger with Chilli, Lime & Feta Mayo.

SERVES: 4

Ingredients

Fried Chicken:

- 4 chicken thighs

- 100g flour

- 1 tsp garlic powder

- 1 tsp paprika

- 1/2 tsp salt

-1/2 tsp black pepper

-Salt and pepper to taste.

- 200ml milk

-1 lemon 

- Vegetable oil for frying, about 2 L.

Dry spice:

- 5g garlic powder

- 5g paprika

-2g tsp salt

-1g black pepper

-2g oregano

-2g sugar

-2g ground coriander

Pickles:

- 2 cucumber

-1 onions

-200g water

- 240g apple cider vinegar

- 40g sugar

- 15g salt

-20g dill.

-5g mustard seeds.

Chilli, Lime & Feta Mayo:

- 100g mayonnaise

- 30g chilli sauce.

-100g crumbled feta.

-1 clove garlic, Micro-planed.  

-1 lime.

-Salt and pepper to taste.

-A pinch of dried chilli flakes.

To serve:

- 4 Burger Buns

- shredded iceberg lettuce

Method

-Start with the Fried Chicken. In a bowl, mix the flour, garlic powder, paprika, salt, and black pepper. Dip each chicken thigh in the buttermilk with a good pinch of salt and pepper and marinade for a minimum of three hours, then roll in the flour mixture. 

-Next, prepare the Pickles Thinly slice the onion and then slice the cumber about 1/2 a cm think. In a medium saucepan combine the water, apple cider vinegar, sugar, and salt. Bring to the boil, then pour over the sliced onions, cucumber, dill and mustard seeds, and let them sit for at least an hour.

-In the meantime, you can prepare the Chilli Mayo. In a small bowl, mix the mayonnaise, chilli sauce, feta, zest and juice of one lime, garlic and chilli flakes .Adjust the amount of chilli sauce as per your taste.

-Mix together, your dry spice in a bowl and set aside then Heat the vegetable oil in a pan over medium heat and fry the chicken at 165° for 6 to 8 minutes thighs until golden brown and fully cooked. 

-Set the chicken aside on a paper towel to drain excess oil season with the dry spice.

-To assemble the sandwich, first toast the bread slices. Spread a generous amount of chilli mayo on each slice. Add lettuce, then the fried chicken thigh. top with the pickles. Cover with another slice of bread.
