Spiced BBQ Chicken Legs

SERVES: 2-4

Ingredients

- 4 chicken legs

- 60 ml soy sauce 

- 20g olive oil

- 20g apple cider vinegar

- 2 cloves garlic, minced

- 2g smoked paprika

- 1g ground cumin

- 1g  dried oregano

- 2g salt

- 1g black pepper

For the Spiced Honey Mud:

- 2 tablespoons Dijon mustard

-5g castor sugar

-2g smoked paprika

-2g garlic powder

-2g coriander powder

-2g Cumin powder

-100g sunflower oil

Method

-In a bowl, whisk together soy sauce, olive oil, apple cider vinegar, minced garlic, paprika, chilli powder, ground cumin, dried oregano, salt, and black pepper. This will be the marinade for the chicken legs.

-Place the chicken legs in a large resealable plastic bag and pour the marinade over them. Seal the bag, ensuring the chicken is well coated. Place the bag in the refrigerator and let the chicken marinate for at least 2 hours or overnight for best results.

-Preheat your grill to medium heat.

-In a small bowl, combine honey, oil, Dijon mustard, smoked paprika, cayenne pepper (if using), and garlic powder. Mix well to create the Spiced Honey Mud.

-Remove the chicken legs from the marinade and discard the remaining marinade.

-Place the chicken legs on the preheated grill and cook for about 20-25 minutes, turning occasionally, until the chicken is cooked through and the skin is crispy and charred.

-During the last 5 minutes of grilling, brush the Spiced Honey Mud onto the chicken legs, coating them evenly.

-Remove the chicken legs from the grill and let them rest for a few minutes before serving.

-Serve the BBQ chicken legs with your favourite side dishes and enjoy!

Note: Cooking times may vary depending on the size of the chicken legs and the temperature of your grill. Make sure the chicken reaches an internal temperature of 75°C (165°F) to ensure it is fully cooked.
