Grilled Halloumi & Tomato Panzanella

SERVES: 4

Ingredients

- 250g stale bread, cut into cubes.

- 250g cherry / heirloom tomatoes, halved

- 100g red onion, thinly sliced

-50g pitted olives, halved. 

-20g parsley

-20g basil 

- 200g halloumi cheese, sliced

- 30g olive oil

- 30g white balsamic vinegar

- 1 garlic clove, minced

- Salt and pepper to taste

- Fresh basil leaves for garnish

Method

-Preheat your barbecue or grill pan to medium-high heat.

-In a large mixing bowl, combine the tomatoes, olives, red onion, and fresh basil.

-In a separate bowl, whisk together the olive oil, balsamic vinegar, minced garlic, salt, and pepper to make the dressing.

-Pour the bread cubes onto a tray, toss in a little olive oil, season with salt & pepper, then bake in the oven at 170ºc until golden brown before setting aside.

-Place the halloumi slices on the preheated grill and cook for about 2-3 minutes on each side, or until grill marks form and the cheese becomes slightly softened.

-Remove the halloumi from the grill and Add the grilled halloumi to the salad bowl with the panzanella.

-Serve and enjoy.
