Sweet Chilli Halloumi Kebabs

Serves: 4

Ingredients

- 4 Halloumi Blocks

- 2 Limes

- 150g Honey

- 2 tbsp Chilli FLakes

- 1 tsp Sriracha

- 1 tsp Olive Oil

- 1 Fresh Chilli (finely sliced)

- Wooden Kebab Sticks (Soaked in water for at least 6hrs)

Method

- Preheat your oven to 180ºc.

- Cut the Halloumi into thick batons, and skewer with the soaked kebab sticks.

- Place a chargrill on the heat (this also works well on a BBQ), and once scorching hot, coat the halloumi kebabs in olive oil then chargrill until each side of the kebab has a good grill mark. Place on a lined baking tray.

- In a small bowl, mix together the lime zest, honey, Sriracha & chilli flakes. Brush the mixture over the kebabs in a thick layer until all the sides are coated. Then bake in the oven for 6mins.

- Finish with a squeeze of lime juice and sliced chillies before serving. Enjoy!
