Smacked Cucumbers

Serves: 4

Ingredients

- 2 Cucumbers

- 1 Red Chilli (thinly sliced)

- 2 tsp Black Sesame Seeds

- 1 Small Bunch Coriander (roughly chopped)

- 1 Spring Onion (sliced)

- 1 Garlic Clove (grated)

- 5 tbsp Soy Sauce

- 2 Tbsp Honey

- 2 Tbsp Rice Wine Vinegar

- Sea Salt

Method

- Using a rolling pin, smack the cucumbers until they split, then tear or cut them into chunks.

- In a large mixing bowl, whisk together the grated garlic, salt, honey, soy sauce and vinegar.

- When fully combined, add the cucumbers, chilli, spring onion, sesame seeds & coriander.

- Mix well, serve & enjoy.
