Roasted Curried Cauliflower

Serves: 4

Ingredients

- 2 Cauliflowers (Cut into florets)

- 2tbsp Ghee/Butter (melted)

- 4 Curry leaves (chopped)

- 3 Limes

- 1 tsp Gara Masala

- 1 tsp Curry Powder

- 1/2 tsp Turmeric

- 1 tsp Smoked Paprika

- Salt (to taste)

- Chopped almonds (optional)

- Fresh Coriander (optional)

Method

- On a large roasting tray, mix together the cauliflower florets, butter, Curry leaves, all the spices and a good pinch of salt.

- When fully combined, roast in the oven at 185ºc for 20 mins, or until golden brown.

- Add the chopped almonds, zest & juice of 2 limes. Mix together and roast once more for 5 mins.

- Serve while hot with a wedge of lime and some fresh coriander.
