Ingredients

-20g honey.
-100g caster sugar.
-60g salted butter.
-10g apple vinager.
-3 pink lady apples.
-4x 10cm disks of puff pastry.

Method

-caramelise the sugars until nearly burnt then add the butter and swirl the pan away from the heat, add the Vinager then mix and pour equally into 4 10cm mini sauce pans.
-using a sheeter ribbon the apples and re-roll into two scrolls, cut each in half and place into the caramel.
-bake covered in tin foil for 22 minutes at 150c Fan.
- bake you puff disks between trays for 12 minutes at 170c Fan and set aside.
- once the apples are cool turn them out onto your puff disks and serve with a healthy dollop of crème fraiche and a wrap of lemon zest.
