Croque Monsieur & Croque Madame

SERVES: 1

Ingredients

-60g unsalted butter.
-60g flour.
-400g whole milk.
-20g Dijon mustard.
-1/4 Nutmeg.
-Healthy pinch of black pepper & flaked sea salt.

-2 slices of good sour dough bread.
-Dijon mustard.
-Mortadella & Coppa ham slices x 3 of each.
-Grated Gruyère cheese.
-The Sauce.

- 1 egg (for a croque madame)

Method

- In a medium pan on a medium heat bring your butter to a foaming stage.
-Add your flour and whisk, you should cook the mixture until light blonde then slowly incorporate your milk by whisking vigorously.
-you can infuse the milk for added flavour by mixing with sliced onion,garlic & bay leaf then gently warming to just under a simmer and infusing for 20 minutes, If you are so inclined.
-continue to cook the sauce for 5 minutes or until the flour taste has gone. Then add the rest of your ingredients mix and set aside.

- pop your bread under the grill or in the toaster to brown, then spread the sauce across each slice (feel free to add some mustard to each slice for a little kick too.

- now layer up your cheese, ham & mortadella before topping with the 2nd slice of toast. Spread more sauce across the top, crown with a big handful of cheese and place under the grill under bubbling and browned.

You have now made your croque monsieur, BUT.. if you’d like a croque madame, top with a fried egg. Enjoy!
