Red Onion & Goat’s Cheese Tart

Ingredients

- 3 Red Onions (finely sliced)
- 2 Cloves of Garlic (finely sliced)
- 1 Square of Puff Pastry 8x8inch
- 250g Red Wine
- 30g Balsamic Vinegar
- 60g Sugar
- Salt & Pepper (to taste)
- 30g of butter
- 1/2 ball of Mozzarella
- 1/2 stick of Goat’s Cheese
- 1/2 pack of Rocket leaves
- Extra Virgin Olive Oil
- 1 Egg (beaten)

Method

- On a medium heat, caramelise the red onion and garlic in the butter. Then season with salt and pepper.
- Once lightly golden in colour, add the sugar, wine & balsamic vinegar, then reduce on a high heat until sweet & sticky.
- Set aside and leave to cool.
- Place your pastry on a baking tray lined with grease-proof paper.
- With the back of a knife, lightly score a 2cm border around your pastry.
- Using a brush, glaze your pastry border with a beaten egg.
- Spread your onion mixture evenly across the pastry. (Keep inside the border)
- Tear your mozzarella and goat’s cheese into pieces. Then place around your tart.
- Sprinkle with fresh thyme & black pepper, then bake at 175°c for 15-18mins.
- Leave to cool slightly before topping with rocket leaves and a drizzle of balsamic & extra virgin olive oil.
