Black Pepper Mayonnaise

Ingredients
- 3 Egg Yolks
- 1 tsp Dijon Mustard
- 10g White Wine Vinegar
- 5g Cracked Black Pepper
- 1 lemon (zest & juice)
- 300g Grapeseed Oil
- 1 pinch of Salt
Method
- In a large bowl, whisk together the yolks, mustard and vinegar.
- Once combined, slowly trickle your oil in whilst whisking vigorously until fully emulsified into a thick, glossy mayonnaise.
- Finish with your lemon zest, juice, salt and black pepper. Whisk once more, then set aside in the fridge.
