Ingredients
- 8 rashers of back bacon
- 4 slices of bread
- Cracked Black Pepper Mayonnaise
- Cherry Tomato Chutney
- Black pepper
- Salt
- 2 large leaves of Romaine lettuce (finely sliced)
Method
- In a heavy bottom pan, fry your bacon until golden and crispy.
- Using the bacon fat in the pan, toast your bread on one side.
- Place your your bread toasted side down and spread with the black pepper mayonnaise.
- Next, place a generous layer of tomato chutney across the bread.
- Top with the crispy bacon, followed by a big crunchy mound of fresh lettuce.
- Spread mayonnaise on the second piece of bread before placing on top.
- Give a squeeze, cut in half… and ENJOY!
