Eggnog

SERVES: 6-8

Method

- In a large metal bowl, whisk together the egg yolks and sugar until thick and foamy.
- In a saucepan, bring the milk, cream, vanilla, nutmeg, cinnamon and clove to a simmer; before slowly pouring into the egg and sugar mix whilst whisking continuously.
- Return the mixture to the pan and cook on a low heat, stirring continuously until thickened and glossy.
- Stir in your booze of choice then leave in the fridge to cool.

- 6 Egg Yolks
- 150g Caster Sugar
- 500ml Whole Milk
- 300ml Double Cream
- 300ml Bourbon/Rum
- 1/2 Nutmeg (finely grated)
- 1/2 tsp Ground Cinnamon
- 1/2 tsp Ground Clove
- 1 Vanilla pod
