Boxing Day Bubble & Squeak

Method

- Peel and chopping your potatoes before boiling in salted water until cooked through.
- Chop up all your favourite Christmas leftovers and mix in a bowl with the potatoes until it become a thick mix.
- Using your own (washed) hands, roll the mix into balls, before moulding into patties and dusting in flour (you can do this without flour making it gluten free, flour just helps them go extra crispy).
- Serve your Christmas leftovers Bubble and Squeak with a big spoon on Cranberry chutney and enjoy!

Ingredients

- All your favourite Christmas leftovers!
- Potatoes (the same weight as your leftovers. Eg: 400g Leftovers, and 400g potato.
- Salt & pepper to taste
- Cranberry Chutney to serve
- 100g plain flour for dusting
- 2 tbsp Left over cooking oil/duck fat
- 1 tbsp Butter
