Oven Baked Jerk Chicken & Slaw

Ingredients

-6 Lime.
-3 Garlic of cloves.
-4 spring onions.
-1 onion.
-1/2 teaspoon ground cinnamon.
-1/2 teaspoon ground nutmeg.
-1/2 teaspoon ground clove.
-1/2 teaspoon ground cumin.
-2 teaspoons salt.
-2 teaspoons ground black pepper.
-2 sprigs thyme.
-2 teaspoons sugar.
-1 teaspoon ground allspice.
-4 scotch bonnets.
-20g sunflower oil.
-4 chicken legs.

-1/4 white cabbage.
-1/2 fennel.
-1 green apple.
-50g Mayo.
-salt & pepper.
-20g cider Vinager.
-zest & juice of 1 lime.

Method

-Take your chicken legs and washed thoroughly under cold water, scrub with half a lime, rinse once more and set aside in a bowl.
-In a food Processor juice your limes and blitz together your remaining ingredients, then score the chicken legs & rub in the seasoning and leave to marinade for a minimum of 12 hours.

-Thinly slice your cabbage, fennel and apple. Then mix together with the mayo, cider vinegar, lime zest & juice, a pinch of salt & pepper. this is your slaw done.
-On a baking tray covered in a wire rack lay out your chicken and place in a 195° oven for 22 minutes.
-Leave to rest for five minutes then serve with the slaw and dig in.
