Sirloin Steak with Mustard Sauce

SERVES: 2

Ingredients

-2x 300g sirloin steaks.
-2g Rosemary.
-1 Bay leaf.
-3 Cloves of garlic.
-30g sunflower oil.
-50g butter.
-Flaked salt & Cracked black pepper.
-2 shallots.
-200ml white wine.
-300ml double cream.
-1 tablespoon of Dijon mustard.
-2 tablespoons or wholegrain mustard.

Method

-Bring your steaks out of the fridge to temper on the side for about 25 minutes, then season well with salt, bring your cast-iron pan up to a high heat & Sear your steaks.
-When Golden Brown on all sides add your butter, aromats And based with foaming butter for 3 to 4 minutes.
-take out of the pan to rest on the Hide while you make the sauce. Slice your shallots and garlic add to the pan and lightly roast. Deglaze with your white wine and reduce to a glacé. Add your Cream, mustard and seasonings and reduce until you have your desired consistency.
-pour in the rest and juices from the steak and serve.
