Peanut Butter & Jam French Toast

Ingredients

-4 slices of brioche.
-your favourite Peanut butter & Jam.
-3 eggs.
-100g milk.
-30g caster sugar.
-1 scraped vanilla pod.
-3g ground cinnamon.
-icing sugar for dusting.
-Garnish of your Choice. (peanuts & raspberries work well).

Method

-Firstly whip your eggs, milk, vanilla, cinnamon , and caster sugar together in a metal bowl.
-preheat your oven to 170°.
-Make yourself two peanut butter and jam sandwiches leaving a small border around the edge of the bread so the peanut butter and jam does not leak out during the cooking process.
-Put your egg mixture onto a plate and soak your sandwiches insuring to get the edges of the bread.
-Place a small amount of butter into a heavy bottom pan and bring to foaming, then caramelise your French toast on each side and place into the oven for 4-5 minutes.
-Leave your French toast on the side to call for two minutes then serve, dust with icing sugar and garnish with toppings of your choice.
