Chorizo Tortilla

Ingredients
-1/2 onion.
-1/4 red pepper.
-1/4 green pepper.
-80g chorizo.
-1 potato.
-1 clove of garlic.
-4 eggs.
-Flaked sea salt & Ground black pepper.
-chopped chives.
Method
-Slice all of your vegetables and chorizo then season with salt and mix. Place plenty of oil in a nonstick pan and slowly fry your vegetable mix on a very low heat for about 10 to 15 minutes.
-Once lightly golden and tender add your eggs and black pepper. Lightly fry for two minutes then place and 160° oven for 8 to 10 minutes. When cooked pry away from the pan & flip onto your board and cover with garnish of your choice.
