Double Sausage & Egg Muffin

Ingredients
-400g sausage meat.
-Flaked salt & Black Pepper.
- 2 sices of your favourite cheese
-2 Eggs.
-2 English muffins.
-Red Sauce.
Method
-Season your sausage meat with salt and pepper then roll into 4 balls.
-Heat a medium sized skillet pan and drizzle with oil, then place your balls into the pan and press flat with a lightly greased spatula.
-Fry on each side until golden brown then take out the patties, slice your muffin in half and toast.
-Place in 2 nonstick tart moulds spray with oil, crack your eggs and splash a little water in the pan then cover with a lid allowing the eggs to steam.
-Then build your muffin and enjoy.
