Tomato Soup & Grilled Cheese

SERVES: 2

Ingredients

- 1 White Onion (finely sliced)
- 6 cloves of Garlic (finely sliced)
- 1kg Cherry Tomatoes
- 1tbsp Tomato Purée
- 200g Whipping Cream
- 4 Slices of your favourite bread
- 250g of your favourite cheeses (grated) I would highly recommend a smoked cheddar!
- Small punch of Basil

Method

- In a large saucepan, cook your onion and garlic with a pinch of salt & pepper on a medium high heat until translucent. Add the tomato purée, stir, and cook for a further few minutes.
- Pour in your cherry tomatoes, mix well and then leave to cook with a lid on for 15mins.
- Once all the tomatoes are fully broken down, pour in your cream then blend until smooth. Check you’re happy with the seasoning, and set aside.
- Load 2 slice2 of bread with the grated cheese before placing another slice of bread on top.
- Place a frying pan on a medium heat and add a few cubes of butter. When foaming, place your toasties in and cook until golden brown, flip then continue to cook until the cheese is nice and gooey.
- Pour the tomato soup into a bowl, top with a drizzle of olive oil, some torn basil leaves and a good pinch of black pepper. Dig in… and enjoy!
