Winter Burrata Bruschetta

SERVES: 2

Ingredients

- 1 Shallot (finely sliced)
- 1 Garlic clove (finely sliced)
- 500g Cherry Tomatoes (halved)
-50g sweet peppers (sliced)
- 2g Chilli Flakes
- 2g Onion Seeds
- 50g Caster Sugar
- A pinch of Salt & Pepper
- 50g White Wine Vinegar

-1 ciabatta.
-olive oil.
-1 burrata.
-1 bunch of basil.

Method

- Mix all ingredients together in a bowl and leave to macerate for 5mins.
- Bring a large pan to a medium-high heat and pour in your tomato mixture.
- Leave to reduce and caramelise, while stiring occasionally until the tomatoes are blistered, and you have a thick, fragrant chutney consistency.
- Pour into a bowl, cover with cling film and store in the fridge.

-Slice your ciabatta in half and douse with olive oil, Put a large frying pan onto a high heat and toast your ciabatta until golden and crispy.
-Spread over your chutney, break your Barata and drape on top, finish with basil, Olive Oil, a good pinch of salt & pepper and enjoy.
