BLT Potato Salad

Ingredients
- 500g New potatoes, boiled and cut
- 200g bacon, cooked and chopped
- 200g romain lettuce, chopped
- 150g cherry tomatoes, halved
- 100g mayonnaise
- 20g white vinegar
- 30g Dijon mustard
- Salt and lots of ground black pepper to taste.
Method
-In a large bowl, combine the potatoes, bacon, chopped lettuce, and cherry tomatoes.
-In a separate bowl, whisk together the mayonnaise, Apple cider vinegar, Dijon mustard, chopped parsley, salt, and pepper until well combined.
-Pour the dressing over the potato mixture and gently toss until all the ingredients are coated.
-Taste and adjust the seasoning if needed.
-Serve chilled and enjoy your BLT potato salad!
