Peach, Honey & Thyme Shortcakes

SERVES: 4

Ingredients

- 200g self-raising flour
- 100g butter, chilled and cubed
- 50g caster sugar
- 300g double cream
-400g Mascarpone
-60g Castor Sugar
-4 Peaches.
-50g Honey.
-1 Vanilla.
-4 Sprigs of Thyme
-50g Flacked Almonds

Method

-Preheat oven to 175°C. In a mixing bowl, rub together self-raising flour and chilled butter until it resembles breadcrumbs.
-Stir in 50g caster sugar. Add 150g double cream and mix until just combined.
-Roll out dough on a floured surface and cut out circles using a cookie cutter.
-Place circles on a baking sheet lined with parchment paper. Bake for 10-12 minutes or until golden brown.
-Half your peaches and caramelise in the honey and set aside and sprinkle with your Thyme.
-whip together your Mascapone, double cream, Vanilla & castor sugar.
-then stack together sprinkled in your toasted almonds.
