Ingredients

- 300g pasta of your choice
- 60g fresh basil leaves
- 40g pine nuts, Toasted
- 2 garlic cloves
- 50g grated Parmesan cheese
- 100ml extra virgin olive oil
- Salt and pepper to taste
- 1 large or 2 small Burrata cheeses
- Fresh basil leaves for garnish

Method

-Cook the pasta according to the package instructions until al dente. Drain and set aside.
-In a food processor, combine the fresh basil leaves, Toasted pine nuts, garlic cloves, and grated Parmesan cheese. Pulse until roughly chopped.
-With the food processor running, slowly drizzle in the extra virgin olive oil until the mixture forms a smooth and creamy pesto sauce.
-Season the pesto sauce with salt and pepper to taste. Adjust the flavors as desired.
-Transfer the cooked pasta to a large pan. Pour the pesto sauce over the pasta and toss until well coated on a low heat.
-Transfer to a bowl and then Tear the Burrata cheese into chunks and gently fold it into the pasta.
-Garnish with fresh basil leaves, address of Oliver, and a good hit of salt and pepper.
