Ingredients

-Any & all vegetables you like and need to use up
-100g Olive oil
-Water
-50g Basil
-50g parsley
-1 clove garlic
-Salt & Pepper (to taste)

Method

- With a saucepan on a medium heat, sweat of your vegetables starting with the alliums & salt, followed by the root veg, and finishing with the greens and tomatoes. Season with salt & pepper.
- Once sweated, pour in your water until all the vegetables are just covered, bring to a boil then simmer until you’ve reached you’re desired textures.. do you like a bit of bite to your veggies? Or prefer them cooked completely?
- Using a blender, blitz together your herbs, olive oil, garlic, salt and pepper.
- Pour in your pistou into your soup, or place in a bowl on the table for people to help themselves. - it’s great on toast too!
- Finish your soup with salt & pepper and ENJOY!
