Devils on Horseback

SERVES: 8

Ingredients

-8 Rashers of Streaky Bacon
-8 prunes
-4 springs of thyme
-40g cheddar cheese
-Salt & pepper to taste
-drizzle of balsamic.

Method

-Line a baking tray with parchment paper and pre-heat your oven to 180°c.
-cut your cheese into small rectangular blocks.
-carefully remove the stones from the prunes and replace with the blocks of cheese,
-lay the bacon flat across the tray then flatten & place a few picked thyme leaves across the middle.
-put your prune on the end closest to you.
-Roll each one, creating your devils on horseback’s. Then roast in an 180ºc oven for 10mins, drizzle with balsamic & enjoy!
