SERVES: Makes 1 Jar

Ingredients

- 100g Water
- 25g White Wine Vinegar
- 20g Sugar
- 3g Salt
- 1 pinch Cracked Black Pepper
- 2g Coriander Seeds
- 2g Cumin Seeds
- 2 Lemon peels
- 8-12 Baby cucumbers (finely sliced) regular cucumbers are also fine.

Method

- Place your thinly sliced cucumbers into a heat-proof container.
- In a saucepan, bring all remaining ingredients to a boil then pour over your cucumbers and set aside in the fridge.
